Happy Eggs For A Crowd

12 Jumbo Eggs

½ stick of butter

1 lb. sausage

1 pint sour cream

8 ounces Velveeta

Fry sausage until done and drain on paper towels or in colander.  Get the grease!  Beat eggs and scramble in melted butter until done.  Mix eggs, sausage and sour cream.  Put in 3 quart glass dish.  Cut Velveeta into cubes and distribute over top of casserole.  Bake uncovered at 350 for about 20 minutes or util cheese melts.  Remove from oven.  Stir the melted cheese into casserole.  At this point, you can cool it and store up to 3 days covered in refrigerator.  When ready to serve, bake uncovered at 350 for 30-35 minutes or until heated through.  Let stand for 10 minutes before serving.  You can make ½ the recipe for a family of 4.

**the TRICK, is you heat this twice.  Once to melt and mix in the Velveeta, then again to bake the entire dish.  SO good.

Serve with or on toast!
